SALISBURY STEAK PO’BOY WITH FRENCH ONION GRAVY

Comment:
This po’boy comes from a classic dish and is a Southern favorite.

Ingredients for Salisbury Steak:
1½ pounds ground chuck
½ cup minced onions
¼ cup minced celery
¼ cup minced red bell pepper
1 tbsp minced garlic
¼ cup minced parsley
2 tbsps thinly sliced green onions
½ cup seasoned Italian bread crumbs
2 eggs, beaten
kosher salt and black pepper to taste
granulated garlic to taste
2 tbsps flour
1 tbsp olive oil

Ingredients for Onion Gravy:
3 cups thinly sliced onions
1 tbsp butter
1 tsp sugar
1 tbsp minced garlic
1 tbsp tomato paste
1 tsp flour
2 cups beef stock
¼ cup dry red wine
¾ tsp kosher salt
½ tsp dried thyme

Ingredients for Fixings:
1 loaf French bread, cut into 4 (6-inch) links
mayonnaise
shredded lettuce
2 tomatoes, sliced
shredded Parmesan cheese

Method:
In a large mixing bowl, combine ground chuck, minced onions, celery, bell pepper, minced garlic, parsley, green onions, bread crumbs and eggs. Season to taste using salt, black pepper and granulated garlic then mix well. Divide mixture evenly into four portions and shape each into 1-inch thick oval patties. Place 2 tablespoons flour in a shallow dish then dredge each patty in flour. Set aside. In a large sauté pan, heat oil over medium-high heat. Add patties and cook 3 minutes on each side or until browned. Remove from pan and set aside. To create gravy, melt butter in the same sauté pan over medium-high heat. Add sliced onions and sugar then sauté 5 minutes. Stir in minced garlic and tomato paste then sauté 1 minute or until paste begins to brown. Add 1 teaspoon flour and cook 1 minute. Add beef stock, wine, salt and thyme, stirring to combine ingredients well. Return meat to pan and bring to a low boil. Reduce heat to low, cover and simmer 10 minutes. To serve, place each hamburger steak on a 6-inch French bread link then ladle 1 ounce of French onion gravy on top. Garnish with mayonnaise, lettuce, tomatoes and Parmesan cheese.
